Champagne Supernova

A cider made like champagne. Old Belgian apple varieties are fermented and bottled, then left to rest for ten months on their own yeast. The bottles are slowly turned and placed upside down before the neck is frozen and the yeast is removed by hand. Finished with a minimal dosage of apple honey to keep it dry, precise, and balanced. Crisp, focused, and built for moments that deserve a little extra attention.
